What We Meal Prepped: July 16

What started as a way for Matthew to have breakfasts prepped for her during the week, turned into prepping a lot of her breakfasts, lunches, and some dinners for the week! I’m not a cook by nature – and when I’m under pressure… I’m even worse. So having some things ready for me to pop in the toaster oven or microwave to reheat has been so helpful for us! Here’s what we meal prepped this week (all original recipes are linked – which I highly recommend following! They have great substitution options). Enjoy!

Yogurt Sheet Pan Pancakes

x 1/2 cup plain whole-milk yogurt
x 1/2 cup milk
x 2 eggs
x tbsp melted unsalted butter
x 1 cup flour
x tbsp sugar (or for baby use non dairy milk!)
x 2 tsp baking powderx 1/4 teaspoon salt
x any fruit toppings

x preheat oven to 400°
x Add the yogurt, milk, eggs, + butter to a medium bowl + whisk to combine.x Add the flour, sugar, baking powder, + salt + whisk to combine.
x line sheet pan with parchment paper + spread to 1/2 inch thick
x pour and spread batter
x top with fruit
x bake for 12-14 min!

Ravioli Fake Out Lasagna

x 25 ounces fresh or frozen cheese ravioli
x olive oil
x 1/2 medium onion, diced
x 2–3 garlic cloves, minced
x 1 lb lean ground beef
x 1/2 lb pork sausage
x 2 (24-28 ounce) jars marinara sauce
x 1.5–2 cups shredded mozzarella cheese
x 1.5–2 cups shredded Italian mix cheese (or more shredded mozzarella)

1. Preheat oven to 375°F. Spray a 9×13 inch pan w/ cooking spray.
2. In large skillet, saute onions about 4 minutes. Add garlic + stir for 1 minute. Next, add beef + sausage to the onion mixture + cook until browned. Drain off the grease, then stir in the sauce + remove from heat.
3. In the baking dish, spread a thin layer of the meat sauce into the bottom. Arrange a layer of half the ravioli over the sauce. Sprinkle about 1 cup of the mozzarella cheese + about 1 cup of the Italian cheese over the ravioli. Pour half of the remaining sauce over the cheese + spread it with the back of a spoon. Repeat layers, ending with the rest of the sauce on top.
4. Cover with aluminum foil + bake for 45 minutes then take foil off + bake about 15 minutes more.
5. rest 10 minutes before slicing + sprinkle with Parmesan cheese!

Baked Apples

x 3-4 medium apples (about 3 cups sliced; core discarded)
x tbsp melted unsalted butter (or coconut oil)
x 1/2 teaspoon cinnamon

x Preheat oven to 375 degrees F.
x Place the melted butter or oil into or baking dish.
x Slice the apples into approximately 1/2-inch slices + place into the baking dish with the oil.
x Add the cinnamon + toss.
x Bake for 28-34 minutes, or until tender when poked with a fork.
x Serve in slices or cut into smaller pieces and add to yogurt, oatmeal, or pancakes.

Cheddar Meatballs (Inspired by Home Chef)


x 1 lb ground beef (or another ground meat)
x 1/2 cup cheddar cheese
x 2 tbsp panko breadcrumbs
x 2 tbsp water
x 1 tsp garlic salt

x preheat oven to 425°
x combine panko + water and sit for 1 minute
x add garlic salt, ground beef and half of the cheese
x mix and form into meatballs
x place in tray and bake for 15 min uncovered
x remove from oven, sprinkle remaining cheddar cheese on top, and cover with foil to bake for another 10-15 min
x drain liquid + enjoy!
